We make a Focaccia Style Pizza.

PaPa J’s Focaccia Dough is made with a blend of high gluten flour, durum semolina flour and whole wheat flour, cold water, olive oil, honey and sea salt and mixed in progressive stages of hydration and rest. 

Our Focaccia Dough develops over several days in bulk slowly. Our Focaccia Dough is tabled, divided, rounded and rests another day bunked in trays. Still cold, the dough is dusted and draped into shortening greased aluminum pans where it, rests again in a moisture trapped cabinet. 

Pizza is built using the best available ingredients: fresh grated Provolone, Mozzarella and White Cheddar, Feta, Mascarpone, Gorgonzola, Pecorino, Parmigiano and Ricotta Cheeses, Fresh Herbs, fresh sliced Mortadella and Soppressata, fresh roasted red peppers and more. 

Our Pizza bakes in a vented very hot stone lined oven for about 7 minutes. When removed, the pizza rests for a moment in the pan to set. Pizza is carved out of the baking pan and set on perforated pans to release moisture. At your order we reheat the pizza which dries the pizza moreso and makes the crunchy crust. PaPa J’s Focaccia Style Pizza has a unique open crumb.

Our Pizza is twice baked and offered fresh all day street style – by the cut. In the spirit of the Strip District, try our pizza folded in half and wrapped in wax paper when you take it on the road and add a some Sautéed Banana Peppers. When you won’t eat the pizza until later ask for it “in a box and unheated” store refrigerated and reheat in oven or air fryer for a few minutes – it will be perfect. 

Our Fresh Pasta is a passionate romance of the pasta and the sauce. 

The majority of PaPa J’s Pasta is fresh made featuring Durum Wheat Semolina and Cold Water and cold extruded from bronze dies. Stuffed Pastas and Lasagna Sheets are made featuring a blend of Semolina Flour, 00 Flour, Whole Fresh Egg and Water, then, machine laminated and hand cut, filled and shaped into Tortellini, Ravioli  Agnolotti and more. 

At PaPa J’s you choose your noodle and your sauce and your dish is prepared fresh at your order. 

We also prepare PaPa J’s Fresh Made Pastas dried slowly with monitored and circulated air and packaged fully shelf stabilized to enjoy at home and give as gifts. 

Our Gelato program is committed to the highest quality in store experience. 

Our Gelato production systems of pasteurization, batch freezing, holding and scoop services are an orchestration the world’s best gelato equipment imported from Italy; selected for generational development of systems combining technology and artistry all in respect the opportunity of your taste experience when you are served at PaPa J’s. Each small batch is scaled, pasteurized and frozen independently. 

Only the most considerate processing of the best flavors including fresh fruits, roasted nuts and highest quality chocolates and our gelatista’s style make PaPa J’s Gelato extra-ordinary. Our Gelato is available over the counter scooped into cups, cones or hand pint-ed to take home.

Our Full Bar features Boutique Cocktails: Negroni, Aperol Spritz and Amaro Menu, 20 Cold Drafts including locals and nationals, select Wines by the Glass and very well priced bottles, Gelato Cocktails, Sorbets floated in Prosecco, Sorbets corrected with flavored Whiskey’s and Affogatos. 

At the bar, Happy Hour is daily 12p-5pm with 1/2 off Beer & Wine from the Spigots.
